    I checked this cookbook out from the library and only had time to make the burrito recipe on page 27 and veggie chili on page 94. They quickly became two of my favorite recipes, and the rest of the meals in the book looked so good that I just had to buy it. This is one of the few vegetarian cookbooks I’ve been able to find that includes recipes that real people could enjoy on a day-to-day basis and on a reasonable budget, not to mention that can be made without a bunch of specialized equipment. A big plus is that thre are several dishes that are suitable for vegans, or that could be easily veganized. Any way you look at it, this is a great cookbook at a great price.

    Some of the recipes sound like they might be pretty tasty, but it might be because of the high fat content. Tons of cheese in the recipes, too….You can always substitute other ingredients for some of the high fat ingredients and cut back on oils and the cheese if you want to make the recipes healthier. I like cheese, but its not something I want to feed my family at every meal.

    I guess the most confusing thing to me was the use of anchovies….anchovies?! Possibly from the rare or extinct anchovy plant? or tree?

    The only anchovies I have ever seen are fish, so not vegetarian.
