Sprouted Quinoa Tabouli Salad: Vegan Raw Food Recipe

This dish is amazing with veggie kabobs, hummus, baba ganoush… or any fresh spring or summertime meals. Rock it out as a side dish or serve with crackers or crudites! Here’s the recipe, you superhero, you: 2 cups tri-color quinoa, soaked & sprouted for 24 hours 1/2 cup extra-virgin olive oil 1/2 cup fresh lemon juice 2 tsp. himalayan salt 1 tsp. ground cumin 1/4 tsp. cayenne pepper 2 cups diced cucumber 2 cups diced tomato 1/2 cup diced red onion 1/2 scallion, cut thin on a bias 1 cup fresh parsley, minced 1/2 cup raw shelled hemp seeds Soak the quinoa for 6-7 hours. When you notice tails sprouting, rinse the quinoa and put in a covered glass jar with a mesh screen. Soak again and rinse twice more in a 24-hour period. Place the sprouted quinoa and hemp seeds in a mixing bowl and combine. Then add all remaining ingredients, mix thoroughly and serve immediately. Keeps for 4-5 days covered in the fridge.

    There are over a hundred different varieties growing in the world today. It is a hardy crop and can withstand harsh climactic conditions.     Hey good video! I haven’t eaten quinoa in a while before tonight. Quin-WHA?! So, tonight, I made a pure tomato + onion + quinoa + rosemary soup. Funny, never made a soup without water before tonight, either. So now it’s time for a bunch of videos on youtube about quinoa. hah

    Recently made a quinoa dish with avocado, diced dried fruit and home-roasted nuts. The seasoning had lemon juice, lemon zest, paprika, cumin, and other spices.. can’t remember all of them now. But it was a huge hit at a party.

    Where can I find alkaline water? Hoping Trader Joe’s and/or Whole Foods?

    And when you soak the quinoa, do you just fill enough water to cover the top? Or float..or w/e quinoa does in water?

    I always pack a couple of bananas in my gym bag for post workout so it’ll hold me over til dinner time. I can’t eat the nut butters due to food allergies. I have to agree with hummus and tortilla chips though. YUM! I’ve been in a big fresh salsa and tortilla chip craving lately for like the last 3 months. What’s up with that? :)
