    Bought the previous volume to this series (on the go vegetarian recipes volume 1) and my husband and I absolutely loved it. We were looking for a fun and easy way to begin the year with a new lifestyle of healthy eating and wellness. The book surprisingly showed us that healthy vegetarian eating didn’t have to be a daunting task as we were able to prepare delicious meals in minutes without even having to use a stove. This made our transition to vegetarian eating pretty seamless and we’re still implementing those recipes on a daily basis so purchasing this volume was a no-brainer for me.

    This book delivers on its title just as volume 1 did by offering simple and tasty fulfilling meals that I can feel good about eating. Although we haven’t tried all of the dinner recipes in this volume yet (as of writing this review), the few we’ve tried so far were great (veggie-man garden burger, raw zucchini alfredo, veggie pita and a few of the salad dishes). There’s a nice variation of creative recipes that will definitely keep things fun in the kitchen. Overall the recipes in these books (1 & 2) have helped the hubby and I adapt a healthier lifestyle by providing easy and healthy recipes that we can enjoy every day.

    I’ve been a vegetarian since early in my teens and one of the big things I struggle with is what to eat when I’m out. I go shopping and it is usually an all day trip and I can’t exactly stop at the local burger place for lunch.

    I love these no cook on the go recipes. Planning on buying the first volume as soon as I try a few more of these recipes!
