How To Make Vegan or Vegetarian No Boil Pasta Bake

My healthy, vegan, one-pot “no boil” pasta bake – I love that you don’t even have to boil the pasta, you can just toss everything together in one pan and throw it in the oven. To ensure the pasta cooks properly, you’ll immerse it in sauce, and then add the other ingredients on top – it’s important not to mix anything until the end to ensure the pasta stays on the bottom layer. I use 250g (1/2 lb) spiral pasta, 2 lg (700g) jars low-fat or fat-free pasta sauce, and whatever mix of vegetables I have on hand – usually a bell pepper (capsicum), zucchini, onion and mushrooms. You can add vegetarian mince if desired – I used two home made vegan sausages (Julie Hasson’s delicious recipe, which is also on YouTube) chopped finely in a food processor. Enjoy!
