I’m really excited to share with you my most favorite vegetarian breakfast and
brunch recipes. My whole family (husband and 3 kids) are all vegetarians and
I’ve been cooking and preparing my own recipes for over 15 years now.

My friends and family have always told me to write and publish my own recipe
and cook book because I have such a burning desire for vegetarian cooking.

So, I decided to go for it and this is the outcome – 47 fast, easy and delicious

    This is a surprisingly large cookbook given the low cost that is full of delicious food. Almost 50 recipes in total, and so far all of them that I have tried have been absolutely delicious. The author has put together a stellar collection of recipes here, all of them vegetarian. They are all of the breakfast and brunch variety, but if you’re anything like me, that doesn’t mean they can’t make great lunch or dinner dishes as well. Instructions are very clear, making it very easy for you to cook delicious vegetarian breakfast foods at home, even if you’re not used to reading from cookbooks. I definitely recommend picking up a copy to add some tasty variety to your breakfast table.

    So I am not a vegetarian myself, but my roommate is. I am a big cooker, I spend most of my weekend cooking and baking for both of us and when I do I try to find delicious vegetarian meals that will appeal to her dietary restrictions and to my taste buds. This cookbook had so many delicious recipes that I got a little giddy and very hungry when I was going through it for the first time. My roommate begged me to make a few of the recipes this last weekend for breakfast, so we ended up having an impromptu brunch with a few friends. Let me just say wow… just wow! They were so unbelievably yummy. I cooked the “Secretly Delicious Spinach Pie”, the “Hot Baked Fruit”, “The Night Before French Toast” and the “Tangerine Polenta”. The dishes were a big hit with our guests. I especially loved the “Tangerine Polenta”, it’s a recipe that I never would have thought of, but it was so rich and creamy with just the right amount of bite from the tangerines. I completely recommend this cookbook whether you’re a vegetarian or not because these dishes are just to die for!

    I’ve really been wanting to try switching over to a healthy, vegan/vegetarian diet. I just recently watched two documentaries on Netflix (Forks over Knives and Food INC) and both made me think more deeply on what I eat and where it comes from. Currently I am still eating meat, but am trying to at least make sure I get locally raised products. I am slowly switching to no meat, and currently do 2 ‘Veggie Days’ a week. I used this cookbook for breakfast on both of those days this week and everything was awesome.

    Fresh Spinach Omelet – This was the first thing I tried. I love omelets but had never made my own, so was a bit apprehensive about trying at first, but it was actually easy. This turned out great and was super delicious. Definitely going to become one of my regular breakfast meals!

    Baked Maple Cinnamon Apple French Toast – These took a bit of prep time, but where sooo worth it. Maybe not something you can make everyday due to time but are a killer weekend breakfast meal. I could probably eat these all day long though haha, they were amazing!
