Ethiopian cooking is one of the most under-rated in the world. It is both highly nutrious and flavorful. And you can serve it to any guest regardless of religion, if you use the Lentin menu. For forty days, the Christians eat no animal products. Thus it is both halal and kosher and acceptable to vegetarian Budhists and Hindus. Many American vegans have taken up Ethiopian-style cooking. It is probably the tastiest of vegan diets. I can’t think of a spice they do not use.
